Hummus with Beef Head Tajine Recipe:
Ingredients:
- 1 beef head, cleaned and cut into pieces
- 2 cups cooked chickpeas (hummus)
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)
Instructions:
1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.
2. Add the beef head pieces to the pot and brown them on all sides for a few minutes.
3. Once the beef head is browned, add the tomato paste, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, and pepper. Stir well to coat the meat with the spices.
4. Pour enough water into the pot to cover the beef head pieces. Bring to a boil, then reduce the heat to low and simmer for about 2-3 hours, or until the meat is tender and falls off the bone.
5. While the beef head is simmering, prepare the hummus by blending the cooked chickpeas in a food processor until smooth. You can add a little water or olive oil to achieve the desired consistency. Season the hummus with salt and pepper to taste.
6. Once the beef head is cooked and tender, remove the bones and any excess fat. Shred the meat into smaller pieces and return it to the pot.
7. Add the prepared hummus to the pot and stir well to combine the flavors. Simmer for an additional 10-15 minutes to allow the flavors to meld together.
8. Adjust the seasoning if necessary, adding more salt, pepper, or spices according to your taste.
9. Serve the hummus with beef head tajine hot, garnished with fresh cilantro or parsley.
