Here's a recipe for green vegetables and chickpeas:
Ingredients:
- 1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 cups mixed green vegetables (such as spinach, kale, collard greens), washed and chopped
- Juice of 1 lemon
- Fresh cilantro or parsley, chopped (for garnish)
Instructions:
1. If using dried chickpeas, soak them in water overnight. Rinse and drain the soaked chickpeas before cooking. Alternatively, you can use canned chickpeas, which are already cooked.
2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
3. Add the cooked chickpeas to the pot and stir them with the onions and garlic.
4. Add the ground cumin, ground coriander, turmeric, paprika, salt, and pepper. Mix well to coat the chickpeas with the spices.
5. Add the chopped green vegetables to the pot and stir them with the chickpeas and spices.
6. Cover the pot and let the mixture cook for about 10-15 minutes, or until the vegetables have wilted and become tender.
7. Squeeze the juice of one lemon over the mixture and stir well.
8. Taste and adjust the seasonings if needed.
9. Serve the green vegetables and chickpeas in bowls, garnished with fresh chopped cilantro or parsley.
