Vegetarian Couscous with Broccoli, Chickpeas, and Vegetables
Ingredients:
- 1 cup couscous
- 1 head of broccoli, florets separated
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
1. Prepare the couscous according to the package instructions. Set aside.
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
3. Add the diced bell pepper, zucchini, and carrot to the skillet. Cook for about 5 minutes or until the vegetables are slightly tender.
4. Add the broccoli florets and chickpeas to the skillet. Season with cumin, coriander, turmeric, paprika, salt, and pepper. Stir well to coat the vegetables and chickpeas with the spices. Cook for an additional 5 minutes, or until the broccoli is cooked but still crisp.
5. Fluff the cooked couscous with a fork and add it to the skillet with the vegetables and chickpeas. Mix everything together gently until well combined.
6. Reduce the heat to low and cover the skillet. Allow the flavors to blend together for about 5 minutes.
7. Remove from heat and serve the vegetarian couscous hot. Garnish with fresh parsley or cilantro.
